Ever since I was young, I like to eat the fried noodles made by my family. The big chunks of pork belly, the thick sauce and the rich dishes, each can make a unique taste, but I really can’t eat this in a restaurant outside. Taste, and there are still a lot of specialties about the fried noodles~

Old Beijing Fried Noodles

2. Half of the shallots and chop the ginger together

3. Pour a whole package of dry yellow sauce into a bowl, dilute with water and stir until there is no lumps

4. Pour oil in the pan

5. Add diced pork belly

6. Stir fry until the pork belly is cooked and oily

7. Pour in minced ginger

8. Pour in the diluted yellow sauce

9. Add the water in three portions, stirring continuously during the period, and boil until the sauce is frothy

10. Add 2 teaspoons of white sugar

11. Finally, sprinkle in chopped green onions

12. Start another pot and cook the noodles

13. Pour the cooked noodles into a bowl, add the fried sauce, place it on the dish, mix well and serve!

Tips:

1. One of the secrets of fried noodles is that the meat should be big, the meat is big and oily, the sauce is only fragrant when fried, and the best choice of fat and lean pork belly;
2. When diluting dry yellow sauce, I use water or soy sauce;
3. Finally, deep-fry some pepper oil and pour it on the sauce, the taste is also very good;
4. In terms of the choice of dishes, the more commonly used ones in my house are shredded cucumber, sliced radish, diced celery, and bean sprouts. According to the season, some toon slices in spring are also good!
