This recipe is what I thought of myself, and I used the chef's method of making smoked fish. The smoked fish mentioned here is also called fried fish in some places, which is made by deep-frying fresh fish. The general fried fish is to season the fish after the pieces are processed, and then deep-fry. The chef likes to make the smoked fish after frying and then marinate it, which is more delicious. Rabbits especially like the smoked fish made by the chef. During the Chinese New Year, beef is usually marinated at home. The marinade of marinated beef is used to marinate smoked fish and dried tofu. It is really delicious!

Ingredients

1. Drain the processed hairtail thoroughly

2. Put vegetable oil about 1 cm high in a flat-bottomed non-stick pan and heat it to 60% heat

3. Put the hairtail, turn to medium heat, cover the pot, and fry slowly

4. After frying on one side, turn over and continue, deep fry on both sides until golden brown and drain the oil

5. Place the brine, water, and soy sauce in a pot to boil

6. Turn off the heat, add sweet vinegar, then add the fried octopus, simmer for 30 minutes at minimum heat

7. Take out the marinated hairtail to control the water and re-fry it with the remaining oil

8. After frying the pan on both sides, remove and drain the oil, let cool and serve, add a little marinade
