Old Braised Hairtail

Drain the processed hairtail thoroughly

Put vegetable oil about 1 cm high in a flat-bottomed non-stick pan and heat it to 60% heat

Put the hairtail, turn to medium heat, cover the pot, and fry slowly

After frying on one side, turn over and continue, deep fry on both sides until golden brown and drain the oil
5.
Place the brine, water, and soy sauce in a pot to boil

Turn off the heat, add sweet vinegar, then add the fried octopus, simmer for 30 minutes at minimum heat
7.
Take out the marinated hairtail to control the water and re-fry it with the remaining oil
8.
After frying the pan on both sides, remove and drain the oil, let cool and serve, add a little marinade
