Omelette Rice with Tomato Sauce

Soak four dried shiitake mushrooms in warm water for 1 hour. My shiitake mushrooms are relatively small, if it is a large shiitake mushroom, only two are needed.

Dice the sausage and shiitake mushrooms, prepare two eggs, a bowl of overnight rice

Heat the pan with cold oil, stir-fry mushrooms and sausages in a pan until fragrant, stir-fry for 3 minutes

Add the rice, turn off the heat and continue to fry until the ingredients in the pot are evenly mixed

Add appropriate amount of shallots and 3 teaspoons of light soy sauce before starting the pan, stir fry evenly

Take a plate and arrange the fried rice into a circle

Then make the egg crust, stir the egg well and fry it in the pan.

Put the egg crust on top of the fried rice, then squeeze the ketchup to finish

The finished product, because our pot is relatively small, the egg wrapper does not completely cover the rice. You can adjust the size of the egg wrapper according to the amount of fried rice.
