Orange Cake Roll
1.
Rub the orange peel with salt, rinse with running water, and drain the surface water
2.
Cut into thin slices (the thinner the better), put in 200 grams of pure water and 40 grams of sugar in sugar water (busy to make cakes, use an electric pressure cooker without lid, don’t have to keep cooking when you set one) and cook until white Transparent (accidentally boiled until the sugar juice is collected)
3.
Lay the orange slices on a mold lined with oiled paper
4.
Prepare the ingredients and preheat the oven at 160 degrees
5.
Put 4 egg whites into an oil-free and water-free bowl
6.
Put 4 egg yolks in a bowl containing 75g orange juice, 40g corn oil, 10 sugar
7.
Whisk the egg whites first, use an electric whisk to make coarse bubbles at low speed, and add one-third of the sugar in 40 grams
8.
Beat at high speed until fine, pour one-third of the sugar
9.
Pour the last third of the sugar with high speed until it has lines
10.
Beat at low speed until small sharp corners appear when you lift the whisk
11.
Beat the liquid egg yolk until light yellow with an electric whisk at low speed
12.
Sift in low-gluten flour
13.
Use an electric whisk at low speed for a few seconds until there is no powder
14.
Dig one-third of the meringue into the egg yolk paste, cut and mix well
15.
Pour the mixed egg yolk paste back into the meringue, cut and mix well
16.
Pour into the mold, smooth it, put it in the middle layer of the preheated oven, and bake at 160 degrees for 20 minutes.
17.
After baking, take it out immediately, put it on the drying rack and cover it with greased paper. After it is allowed to cool, roll it up with greased paper (I just rolled it by hand), wrap it tightly with a fresh-keeping bag, and put it in the refrigerator to set for more than 30 minutes
18.
Cut into sections after setting
19.
Finished product
Tips:
1. The orange slices are placed in the finished product that you decide to cut. The first time you make it, you can put a few more orange slices in the next time. It may look better and have a richer taste.
2. By accident, the orange slice syrup is more delicious.
