【orange Cake Roll】
1.
Wash the oranges with salt and slice them
2.
Add rock sugar to the pot and boil; add orange slices and cook until the orange peel is transparent and the moisture is basically dried, let cool for later use. (You can make it in advance and put it in the refrigerator)
3.
Separate egg yolk and egg white
4.
Salad oil and freshly squeezed orange juice and mix well
5.
Add 30g white granulated sugar and stir evenly until saccharification
6.
Sift in the powder and mix until there is no dry powder
7.
Add the egg yolk in two batches
8.
Mix into egg yolk paste, set aside
9.
Preheat the oven 180 degrees. Add 60g white sugar to the egg whites in three times
10.
Use an electric whisk to distribute to nine, with hooks
11.
Take a part of the egg white and add it to the egg yolk paste, cut and mix evenly with a spatula, then mix all the removed egg white and egg yolk paste and mix well
12.
The bakeware is 28cm×28cm, covered with baking paper, put similarly sized candied orange slices on the kitchen paper to absorb the moisture, and put them in the bakeware
13.
Pour the batter into the baking pan and smooth
14.
Shake twice to eliminate big bubbles. Put the middle layer of the oven, and then insert another baking pan under the baking pan (do not paint the bottom too heavily). Bake at 180 degrees for 17-20 minutes. After baking, pat the surface of the cake with your hands. It is not sticky and there is no rustling, or you can insert a toothpick into the cake and take it out to make it clean. If the oven can adjust the temperature up and down, there is no need to insert another baking tray, and the temperature of the lower tube is adjusted to the bottom by about ten degrees.
15.
The baked cake is upside down on the wire rack, and the oil paper is torn off immediately. Turn it over, put new greased paper on the bottom of the cake, and evenly spread the jam on the front end about 3cm without wiping. Use a rolling pin to roll into a roll, roll up the cake at both ends and seal it in the refrigerator for more than 1 hour to set.
