Orange Chocolate Muffin Cake

Prepare ingredients.

First, wash the oranges, take an appropriate amount of orange peel (do not get the white part) and cut into diced orange peels. Put the diced orange peel, sugar, corn oil, and eggs together and stir well.

Use a hand-held electric whisk to stir at high speed for 5 minutes. The egg liquid is slightly whitish.

Mix low-gluten flour and baking powder evenly and sieve. Take a quarter of the low-gluten and add it to the egg liquid, stir with a spatula until there is no dry powder, a small amount of dry powder can be ignored.

Add a quarter of the milk and mix well. Don't over-mix, there is a small amount of milk at the bottom of the basin to be ignored. Add the remaining milk and flour alternately in three batches and stir evenly. Don't over-mix.

Cut half of the chocolate and half of the orange into the cake batter and mix well.

Spread a layer of greased paper on a 6-inch cake mold and pour the cake batter into it. (Preheat the oven up and down to 170 degrees).

Crisp part: sugar, almond flour, low-gluten flour, salt, mix evenly, add corn oil and knead into small particles.

Take half of the crumbs and sprinkle on the cake batter.

Place the remaining chocolate chunks and orange meat on the cake as you like.

Sprinkle the other half of the crumbs.

Put it in the middle of the oven and bake for about 55 minutes. If the color is too dark halfway, it should be covered with tin foil.

Tips:
The oven is different, the temperature and baking time are adjusted according to your own oven.
After adding the flour and milk, just stir a few times, don't over-mix.
Orange and chocolate make surface decorations according to your preference, or you can replace them with your favorite.
