Palace Beef Shortbread

Mix all the ingredients for the crust and knead it into a smooth and soft dough. Cover the dough with a damp cloth or plastic wrap and let it stand for half an hour.

Make beef filling while proofing the dough. Add pepper powder, salt, chopped green onion, ground ginger, and light soy sauce to the beef filling and mix well. Then add cooking wine and water, and quickly beat with chopsticks until it becomes sticky and moist.

Apply a layer of vegetable oil to both hands and chopping board to prevent sticking. Put the proofed dough on the chopping board, knead it into long strips, and cut into 10 small portions.

After relaxing for 10 minutes, take a small portion of the dough and slowly knead it into a long strip, pinch the two ends of the dough, and pull it longer.

Put the long strip of dough on the cutting board coated with vegetable oil (apply a little more oil to avoid sticking to the cutting board), and roll it into a thin strip with a rolling pin. Try to be as long as possible and as thin as possible, so thin that it feels a little transparent.

Spread a layer of vegetable oil evenly on the rolled strips.

Put a ball of minced beef on one end of the dough.

Fold the dough and wrap the beef filling.

After wrapping the beef filling, roll it up from one end of the filling to the other. At the beginning of the roll, put the dough on both sides in the middle to make the beef filling more tightly wrapped.

After the beef filling is completely wrapped, continue to roll. At this time, you don't need to close the two sides in the middle, just roll it up directly. When rolling, it is best to stretch the dough while rolling to make it thinner.

Roll up all the dough in turn and let it rest for 10 minutes.

Take a rolled dough and stand it up.

Squeeze gently with the palm of your hand.

Flatten all the dough in turn. Use light force when pressing the dough to avoid squeezing out the beef filling. If you feel the dough shrinks when you press it, let it relax for a while and press it again. After flattening, brush another layer of vegetable oil on the surface of each dough (a little more oil).

Preheat the electric baking pan (the upper and lower plates are heated at the same time).

Pour some oil on the bottom plate of the electric baking pan and spread it out with a silicone brush. The oil can be a little bit more (the preheated electric baking pan is very hot, so use a silicone brush instead of a hair brush, otherwise it will be burnt).

Place the dough in the preheated electric baking pan, leaving enough space between each dough (up to 8 at a time, you can also divide it twice, 5 at a time).

Cover the electric baking pan, select "Pies/Pot Stickers", and the reminder will sound for about 6 minutes. At this point, press "Pies/Pot Stickers" again, and wait for the reminder to sound again, and the palace beef shortbread can be baked! (Equivalent to running the "pie/pot stickers" program twice, about 12 minutes, when the baking pan is halfway through, you can turn on the electric baking pan and turn the shortbread over as the case may be)
Tips:
1. The dough for this shortbread should be made softer. Because the water absorption of flour is different, adjust the amount of water according to the actual situation, and make it into a very soft dough.
2. When rolling out the dough, roll it out as thin as possible and longer, so that the effect will be good. When rolling, you should also stretch while rolling. In short, try to make the dough as thin as possible. If your chopping board is not big enough, you can operate it directly on the kitchen countertop. In fact, I prefer to operate directly on a smooth table, which is more convenient than on a wooden chopping board. Whether it is a cutting board or a countertop, you need to apply enough vegetable oil to prevent sticking.
3. The shortbread cookies sold outside are made with commercial electric baking pans. Different electric baking pans have different firepower and function settings. The baking time should be flexibly adjusted according to the actual situation. The quick-heating electric baking pan I use not only heats very evenly, but also has a super short preheating time.
4. To make crispy beef shortbread, except that the crust must be rolled out long and thin. When baking the shortbread, pour more oil in the electric baking pan, and the baked shortbread will be crisper. The baked shortbread cookies are delicious when eaten while they are hot!
