Pan-fried Fish Maw Stew

Kill the fish and remove the meat.

Put the two pieces of boneless fish on the cutting board, with the skin down, chop the fish loosely with the back of the knife, and scrape the fish out with the tip of the knife.

Use the back of a knife to chop the fish into isinglass, add the minced ginger, green onion, salt and rub vigorously, and finally add the wood powder and knead evenly.

Heat the pan, put a little oil, add the fish gelatin, dip some oil, and slowly press it into a cake with your hands. Fry it slowly over low heat. Turn over and fry again after a period of time. Repeat this process until it is done.
