Pan Fried Wild Large Yellow Croaker

Wash the yellow croaker and cut it open. It is best to press it flat with a heavy object.

Spread salt evenly, then pour white wine

Spread the ginger slices on the front and back of the fish, sprinkle with peppercorns, and marinate for 4-6 hours

After 6 hours, remove the peppers and ginger slices, wipe off the excess water from the fish with kitchen paper, and air dry for 1 hour

Cut the peppers and garlic sprouts into cubes, shred the perilla, and prepare well

Pour an appropriate amount of vegetable oil into the pan, fry the chili, pepper (used for pickling fish), and perilla on low heat

Then turn to medium heat and put the fillets face down

After about 2-3 minutes, turn over and fry

After another 2 minutes, turn it over again and pour in the garlic sprouts

Finally, pour the balsamic vinegar along the side of the pan and fry for 1 minute.
