Pan-fried Zanba Fish

Clean the internal organs of the grass carp, then remove the head and tail, and cut into square pieces with a knife.

Put the sliced fish into a bowl, add salt, dark soy sauce, light soy sauce, vinegar, ginger, dried chili, flavor, star anise and other seasonings, mix well and marinate for more than 1 hour

Turn on the gas stove, pour in the right amount of oil after the pan is heated, and when it is 60% hot, add the marinated fish and fry slowly on low heat. When one side is cooked, turn it over and fry the other side.

After frying on both sides, add scallion white, a little boiled water, sugar, light soy sauce and cook on high heat until the water is almost dry.
