Panda Bean Paste

Ingredients preparation: 400g flour, 4g baking powder, 15g black sesame paste, 5g white sugar

Pour baking powder and sugar into the flour, mix well, divide into two portions, one 2/3 and one 1/3.
Mix 2/3 of the flour with warm water into a cotton wool shape, knead it into a dough and wait for it to ferment to double its size

Pour the remaining 1/3 of the flour into the black sesame paste and stir evenly. Add appropriate amount of warm water according to the situation, knead it into a smooth dough, and wait for the size to be doubled.

Fermented dough (if the weather is cold, you can put the basin in warm water to accelerate the fermentation)

When it’s time for the noodles to make the bean paste filling, the cooked red beans filter out the water, mash them or crush them with a spoon, and then pour them into a non-stick pan to fry the excess water. The kneaded dough is divided into small equal parts, rolled into thin slices with a thick middle and thin edges, put on the bean paste, close the mouth like a bun, and shape it slightly with the mouth facing down

Knead the black sesame dough and roll it into a pancake. Use a mold to press into a round piece. The larger one is divided into two halves, and the smaller one is pressed into an oval shape. Use a straw to press out the eyes.

Put cold water into the pot, cover the lid and wait for the second fermentation. The fermented dough will become bigger and lighter. Then turn on the fire and wait for 20 minutes after the pan is turned on. After turning off the fire, let it out for 3-5 minutes.
