Take out the refrigerated dough and place it on the kneading mat, stretch and knead it like clothes with your hands. The dough will be sticky at the beginning, so you need to use a scraper to scrape off the dough from time to time

Knead repeatedly in this way, until the dough is no longer sticky, can pull up a thicker film, add softened butter to continue kneading

Knead and beat the dough with butter until the surface of the dough is smooth. Cut a piece of dough and slowly unfold it with both hands, you can pull up a large piece of film, the crack is a zigzag round hole, the expansion stage.

Take a clean egg-beating tray, spread a few drops of salad oil on the bottom of the tray, put in the dough, and cover with plastic wrap to ferment
