Peacock Fish

Kill the bass you bought and come back and wash it.

Cut off the head and tail, and cut from the back to the belly. Don't cut it off. Add a little salt and cooking wine and marinate for ten minutes.

Place it on the disk as shown in the figure.

Add red pepper circles to garnish.

Boil the water in the steamer, add the fish, cover, and steam for six minutes on high heat. Turn off the heat and steam for ten minutes. In the meantime, heat the oil in the wok and turn off the heat, pour the steamed fish soy sauce, take the fish out of the pan, sprinkle with coriander and drizzle with hot oil.
