Peanut Lotus Root Pigtail Soup

The raw materials are shown in the picture. The chickpeas are not required, the red dates need to be pitted, and the pigtails are rinsed with water several times.

I use an electric stew pot, so I add a little water and peanuts to preheat the electric stew pot first. Do not cook dry, just ignore it if you use a clay pot

Boil water in another pot, put a piece of ginger, blanch the pigtails until they change color, remove the pigtails and wash

Use a knife to scrape the pigskin part, then use tweezers to pull off the tail hair, and then rinse it off

Boil a pot of water again, add pigtails, ginger slices, and red dates after the water is boiled. Bring to a boil again, transfer the soup to the electric cooker, and simmer for 2 hours.

After simmering for an hour, add the lotus root (wash the lotus root, remove the skin, cut into four pieces and pat loosely with a knife), continue to simmer for an hour and add salt.
