Put the onion, celery, carrot and butter in a large saucepan and fry for a few minutes over medium heat; add flour and curry powder, and fry for another 5 minutes. Add the chicken broth and stir well; when the broth is boiling, reduce the heat and cover the pot and cook for half an hour.

Add apple, rice, chicken, salt, pepper, thyme and stir well. Cover and cook for another 15-20 minutes, or until the rice is cooked.
