Pepper Pork Belly and Ginkgo Soup

First, turn the pork belly, pour some oil and salt on the pork belly, grab it hard, then rinse it off, at most two times, it is enough; then use the ginger slices to boil the water and blanch it for five minutes after the water is boiled, and then tear it. Drop the white part, and you can cook the soup in the pot.

It is best to use a clay pot for boiling pork belly soup. First boil the bone broth, then add ginger and pepper pork belly to boil for half an hour, and finally add the ginkgo to boil and turn to low heat for one hour.

After it's cooked, take out the whole pork belly and cut into strips, then put it in the soup and season with salt. Sprinkle with coriander.
