Pickled Fish

Turn the bought fish fillets into fish fillets, mix well with salt and cooking wine and marinate for 30 minutes. This will make the fish taste delicious and remove the fishy smell

Wash the bought colored sauerkraut and cut into small pieces for later use, and cut the green onion, ginger, and garlic for later use (cut the green onion into sections, cut the garlic into two pieces, and slice the ginger!)

Take out the fish that has been marinated for half an hour, wash it with clean water, drain the water, put an appropriate amount of MSG in and mix well, and mix until the fish is smooth. Too much will make the soup, and too much fish will have a thick layer on it, and it will not look good) Use a little water to mix well, pour in and mix well, set aside for later use!

When the pot is hot, add lard (vegetable oil is fine). After the pot is hot, add the peppercorns, ginger and garlic. After sautéing, add the chopped sauerkraut, stir-fry slowly on low heat, and wait for the aroma to come out (stir-fry for a while) and add an appropriate amount of water! Wait for the water to boil for a few minutes, and pour the purchased millet peppers together with the water. Put the broken pieces in, pour some white vinegar in and boil for ten minutes

When it's done, put some chicken essence and salt! Put the scallion in. Put the fish head in it and cook it (don't use a shovel to move it in, so as to avoid the starch on the top and melt the soup), cook for a few minutes before putting the fish steak with bones! Cook for a few minutes and then put the meat in one by one! When the fish turns white, it can be served in a pot!

After being out of the pot, wash the pot well, put in an appropriate amount of vegetable oil and heat it up! Put a few pieces of dried chili on the fish out of the pan, sprinkle some pepper powder, and sprinkle well! Sprinkle the green onion leaves and coriander on top! Sprinkle hot oil on it! A hot and sour fish is complete! The soup is so good that you can't stop
Tips:
Remember, don’t use a shovel to move the fish just after it’s in the pot, or it will melt the soup! I used MSG to mix fish in order to make the fish more tender!
