Pickled Fish

One herring, clean it.

Sauerkraut, disassemble, clean and cut into sections.

Cut the garlic slices, minced garlic leaves, and green onions.

Prepare fennel, Chinese pepper, and red pepper. The red pepper will not be too spicy without cutting.

Next, deal with herring. Lay the fish flat as shown in Figure 1, and use a knife to cut the fish from the head to the tail. Draw next to the fish bone, so that it is easy to operate the next step.

Then cut in with a flat knife from the tail to the head of the fish. Forward in a see-saw style.

Cut off to the fish gill.

Use the same method to slice the other half.

Then cut the bones and heads and put them together with sauerkraut

Slice off the fishbone from the belly of the fish belly and cut into small pieces.

Then, the diagonal knife starts to fillet the fish from the tail. It also goes backwards in a see-saw style.

For sliced fish fillets, add an egg white, a spoonful of cornstarch, and a spoonful of oil.

Add appropriate amount of pepper and salt.

Then, knead well with your hands, follow the clockwise direction, knead for a few minutes and let it stand for use

Add oil to the pot and fry the garlic slices, green onions, Chinese pepper and dried pepper.

Add sauerkraut and fish bones and stir fry. (Put the pickled peppers into the pot at this step)

Add boiling water or bone broth. After boiling, add balsamic vinegar, salt, and light soy sauce, and simmer for about 15 minutes.

After the fish fillets are cooked, use a colander to remove them and place them in the basin shown in Figure 18.

Heat the oil on the net pan. (You can also add some red dried peppers)

Just drizzle hot oil on it.
Tips:
1. Fish fillets can be handled well by selling fish.
2. The supermarket has all the sauerkraut and fish. If you like the strong taste, you can follow the steps.
3. If you like more spicy, add some pickled peppers and sour and cook together.
