Pickled Pepper Sour Soup Frog

1. Cut white radish into strips, add white vinegar, cold water, and salt to soak for flavor. The ratio of white vinegar to cold water is 2:1. After adjusting it, try the taste of the juice. You can feel that the juice is sour and salty. After finishing the other ingredients, the radishes will taste only when they start to cook. (Soak for at least half an hour)

2. The frogs are bought at the supermarket and have been killed and peeled. Rinse them with clean water, change the knife into small pieces, and drain the water.

3. Marinate the frog with cooking wine, salt, white pepper, egg white, and a small amount of pepper oil (nothing is fine). After stirring, add a small amount of cornstarch and stir in one direction for a while. Corn starch is the key, and frogs wrapped in corn starch will be tender no matter how long they cook.

4. Cut all the ingredients well.

5. Wash the soybean sprouts and enoki mushrooms. The one I bought is organic soybean sprouts. It still has a crunchy texture after cooking for a long time. It is especially delicious.

8. Heat the pan with oil, add the ingredients and sauté until fragrant, leaving a portion of the green and red peppers and don't put it in the pan. Finally, it is used for frying.

9. Add appropriate amount of yellow bell pepper sauce and red oil chili sauce, stir-fry evenly, pour in boiling water and bring to a boil. The side dishes are cooked well. (When the white radish is in the pot, pour some of the water used to soak the radish, and try the sourness and saltiness of the soup. It is not enough to add vinegar and salt.)

11. Pour the frog into the pot evenly, do not turn it, cover the pot and cover it for 3 minutes, then open the lid and stir evenly, and keep it for 2 minutes. It's ready to be out of the pot. Pour all the frog and the soup base into the bowl where the side dishes were just placed.

12. In addition, take a small pot, put an appropriate amount of oil to heat, put the remaining green and red peppers and peppercorns in the front and fry them, remove them and spread them evenly on the frog. The oil continues to heat up.

13. The oil burned until it smoked and poured it on the frog. Get it done, serve!
