Pig's trotters, everyone sounds greasy. I have made garlic pork trotters before, and my daughter loves it. She said it tastes better than stewed soup. This time, pickled peppers are added to relieve greasy and fishy, sour and spicy appetizer. Don't miss if you like the taste of pickled pepper.

Pickled Pepper Trotter

1. Chop the trotters and wash them

2. Add ginger and shallots to the pot, boil water, and blanch

3. After blanching, wash with warm water, then put it in the pressure cooker, add a little salt, press for 20 minutes

4. Prepare the garlic and pickled peppers, and chop up a few pickled peppers

5. Cucumber cut into small pieces

6. Add pickled peppers and Chinese pepper to the pot and bring to a boil

7. Add garlic, minced pepper, balsamic vinegar, light soy sauce and mix well in the seasoning bowl

8. Add the pork knuckles pressed in the pressure cooker, bring to a boil, turn off the heat

9. Put it into a bowl and let it soak with the soup for 1, 2 hours, or put it in the refrigerator for a longer time. Take it out and add the sauce as you like

10. Or remove the trotters from the pot and mix well with the seasoning mixed in step 7 to enjoy

Tips:

1. The trotters should not be pressed for too long, so that it will be more chewy, according to personal taste;
2. After the pickled peppers are boiled, add the trotters and cook them in a soup pot, or put them in a bowl and put them in the refrigerator;
3. It is also possible to add cucumber or radish;
4. The soaked trotters can be drizzled with spicy oil or garlic, as you like.
