Pig's Trotter and Cabbage Soup
1.
The pig's trotter was brought to me by my dad, and it is usually sold in stewed meat shops. Don't buy the spicy one. It is best to use white trotter. You can also buy raw trotters, then put salt and star anise in the pot and cook them.
2.
Cut the trotters into small pieces, because the trotters are too big, it only used 1 and a half
3.
Wash the cabbage and cut into small pieces
4.
Slice green onion, slice ginger
5.
Wash coriander and cut into sections
6.
Put enough water in the pot at one time
7.
Put the chopped trotters into the pot, then add green onion, ginger, dried chili, and Chinese pepper
8.
Bring the fire to a boil, use a colander to remove the foam
9.
Continue to simmer on high heat, about 15 minutes or so, the soup will be very white and thick, then low heat, simmer until the meat is rotten
10.
Put the cabbage in the soup, don’t worry about it, the cabbage will melt into the soup when it becomes soft
11.
After the cabbage becomes soft, add salt and pepper and continue to simmer for 15-20 minutes
12.
Stew until the cabbage becomes transparent, then add coriander and sesame oil.
Tips:
Be sure to put some sesame oil at the end, otherwise the scent won't stand out.
At the beginning, be sure to simmer the pig's trotters soup into creamy white
