Plum Sweet and Sour Pork Ribs

Chop the ribs, clean them, and prepare all kinds of ingredients. Put the ribs in a clean pot, pour in water to cover the ribs, bring to a boil over high heat, and blanch the water.

After blanching, remove the ribs, rinse with cold water and drain the water (cold water rinse makes the ribs firmer). Clean the pot and wipe dry. Pour in corn oil, add rock sugar, and start to fry the sugar over medium heat.

Stir-fry until the rock sugar is completely melted, showing an amber color, but without a burnt taste.

Pour in the drained ribs. Turn to high heat and start to stir fry to color the ribs.

Pour in the cooking wine to remove the fishy. Pour in the braised soy sauce and stir-fry to make the ribs look better. Pour in half of the vinegar and stir well. Add shredded ginger, dried plums, and a right amount of water to pass the ribs. Turn on the fire and start to simmer. Cover the pot and simmer until the soup boils. Turn to low heat and continue to simmer.

Stew until the ribs can be pricked with chopsticks, you can add salt to season them, and after stir-fry them, the fire begins to collect the juice.

The soup is slightly dried, and then pour the other half of the rice vinegar. Continue to stir fry, and finally receive only a little bit of the soup, then turn off the heat.

Sprinkle sesame seeds out of the pot! The taste at this time is just right, sweet and sour and delicious, with plum, sweet and sour with a hint of plum fragrance!
