In November, the northeast is already covered with snow. I cook a pot of ribs and lotus root soup on a slow fire on weekends. The outdoor is the cold of early winter. The whole kitchen is filled with the smell of thick ribs and broth, accompanied by a warm atmosphere. I feel that life is very happy

Pork Ribs and Lotus Root Soup

1. Wash the ribs and put them in a boil in cold water, and remove them after boiling the blood foam

2. Prepare all the ingredients, cut carrots into hob blocks, wash lotus roots and slice them

3. Put the ribs, shallots, Chinese pepper Dalian cinnamon, pepper and ginger powder into the soup pot at the same time, add boiling water and cook

4. After the fire is boiled, change to medium heat and cook for half an hour

5. After half an hour, add lotus root slices, carrot pieces, mushrooms and corn kernels and continue to cook. After boiling, reduce the heat to low heat and cook for 30 minutes.

6. Skim the scum 5 minutes before cooking, add salt to taste

7. Put it out of the pot into a pre-heated stone pot or hot bowl, and enjoy slowly

Tips:

Don’t put all the ingredients in the pot. Cook the ribs for half an hour to fully cook out the rich flavor of the broth. In fact, it’s best to use dried ginger for the soup, followed by fresh ginger, but both of them are out of stock. I didn’t want to go out and buy it, so I had to use ginger powder instead
