Pork Ribs and Lotus Root Soup

1. Wash the ribs and set aside.

2. Mushrooms, spring onions, ginger and star anise are ready for use.

3. Peel the lotus root and cut it for later use.

4. Boil the ribs and set aside.

5. Fill the pot with water, add the blanched ribs, then add the shiitake mushrooms, ginger slices, star anise, and green onions together and simmer for about 40 minutes.
