Tips:
Lotus root has seven holes and nine holes. The surface of seven-hole lotus root is generally red, and the texture is rough and waxy. It is more suitable for soup or stew. On the other hand, the surface of the nine-hole lotus root is relatively smooth and the color is relatively white, which is relatively suitable for cold dishes or stir-fried dishes, and the taste is crisp. Therefore, if you choose lotus root for stew, you should choose seven holes.
