Pork Ribs Soup
1.
Wash the ribs, put them in a pot, add a proper amount of water, and bring the ribs to a boil.
2.
Pour out the water used to cook the ribs and wash off the surface foam
3.
Put the ribs in a crock pot, add an appropriate amount of water, and a few drops of white vinegar. After the high heat is boiled, turn to a low heat and simmer slowly.
4.
Soak shiitake mushrooms in cold water
5.
Put the mushrooms in for about half an hour, continue to simmer on a low heat, for about an hour, the soup is thick, poke the meat with chopsticks, it is easy to pierce it, it means that the stew is done, add an appropriate amount of salt. Just sprinkle with green onions.
Tips:
1. Use cold water for blanching. If you blanch with hot water, your muscles will contract rapidly under high temperature and protein will condense, which will seal the blood in the meat, making the fishy smell difficult to remove.
2. The amount of salt depends on the amount of water. You can put a little bit less first, dip in the soup with chopsticks and taste, and then add a little bit more appropriately. Try a few more times and you will know it.
3. Add a few drops of vinegar when stewing the ribs soup, which can not only dissolve calcium, phosphorus, iron, etc. in the bones, which is beneficial to the body's absorption, but also protects the vitamins in the bones from being destroyed and improves the utilization rate.
