Potato Roast Chicken

Wash the bought grain chicken nuggets. Wash the blood four or five times and drain the water, then put it into a large container. Add a spoonful of light soy sauce, a spoonful of soy sauce, a spoonful of bean paste, a spoonful of millet hot sauce, a spoonful of cooking wine, a spoonful of pepper, a spoonful of salt, a spoonful of cornstarch, and a spoonful of shredded green onion and ginger for about 20 minutes.

Then heat up the oil in the pan, heat it to 60% to 70% heat, add the peppercorns, ginger slices, star anise and bay bean paste and stir fry until fragrant. Pour the chicken nuggets, stir-fry for about three minutes on high heat, then add (boiling) water over the chicken nuggets. The boiling water is best. After the water is boiled, add a spoonful of cooking wine, a spoonful of light soy sauce, four or five crystal sugar, four or five garlic , Two small green onion and white section, pickled pepper section, cook for one or two minutes, and pour the whole into the prepared casserole. Then simmer on medium-low heat for about 25 minutes.

When the casserole cooks slowly, prepare the side dishes. Cut two potatoes into small pieces, cut green bamboo shoots into pieces with a hob, and cut green peppers into pieces. Turn the bottom of the pot halfway to avoid sticking the pot. Add the side dishes at about 25 minutes, turn it over and continue to simmer for 10 to 15 minutes on medium and low heat. Then add a spoonful of salt and a spoonful of chicken essence to taste, turn off the heat and simmer for about 20 minutes, and then it will be more fragrant.

After simmering, you can taste the salt appropriately, if there is no problem, you can serve it out. In the end, there is basically no need to add chopped green onion or coriander leaves to this dish.
Tips:
If you like spicy food, you can add millet hot sauce and pickled pepper. If you don’t have one, you can add some dried pepper instead. I like to cook this dish in a casserole, the chicken will be more fragrant and softer. (The moisture in the ordinary pot evaporates quickly) The most important thing is that it will be more fragrant after being cooked and simmered for half an hour or the second meal.
