Potato Stew with Beans
1.
Remove the tendons from the beans, break the two sections apart, wash and set aside.
2.
Squeeze the soybean paste into a bowl, stir well with water, then put the chopped green onion and ginger aniseed into the sauce bowl and set aside.
3.
After the potatoes are peeled and washed, one part is cut into pieces, one part is sliced (pictured), and the pork belly is cut into thin slices for later use (the pig skin does not need to be removed).
4.
Heat the wok and add meat oil.
5.
After the meat oil has melted, add the pork belly, stir fry until the color changes, and then add the pepper noodles.
6.
Pour in the sauce containing chopped green onion and other seasonings.
7.
Stir the pork belly in the pan evenly and pour the beans.
8.
Stir-fry the beans until they turn green.
9.
Put the potato pieces into the pot, the potato chips should be close to the side of the pot.
10.
Then pour in cold water, cover and stew. After the high heat is boiled, simmer slowly until the soup in the pot is collected. During this period, turn it over 2~3 times, but don't touch the potato chips on the side of the pan.
Tips:
This dish is best to be stewed in an iron pan, and the potatoes should be made of sand.
