Prawn Salad with Chicory

Wash the chicory and asparagus, cut the chicory into pieces, cut the asparagus into small pieces, peel the prawns, remove the head, and remove the shrimp threads. Put them in boiling water and blanch them until they are cooked. Cut the cheese into cubes for later use.

Heat the whipped cream in a pot, add the diced cheese, turn to low heat, and simmer until the diced cheese melts, add mint mint and turn off the heat.

Put the chicory and asparagus on the plate, add the prawns, drizzle in a solution of cheese and cream, and sprinkle with chopped walnuts.
