1. Cut beef tendon into small pieces (smaller than a fist)
2. First blanch it with water.
3. Use Chinese pepper, ginger, small red pepper (dried chili), green onion, star anise, and boil for one and a half hours~1 hour and 40 minutes~~(pour out the soup)
4. Use a wok to put the cooked meat directly in the pan, add soy sauce and sugar and stir-fry (the soy sauce can be flat with beef, about 2 tablespoons of sugar per pound of beef)"
