Private Fried Noodles
1.
Pork stuffing with cooking wine, minced ginger, mix well and marinate
2.
Diced tofu (you can also add potatoes, etc.)
3.
Diced carrots
4.
Stir-fry the minced meat, stir out the water and oil, tilt the pan gently to control the oil, and get the meat out
5.
Wash the pot and put a little oil, heat the oil and put two star anises, fry out the fragrance, (turn off the fire halfway, control not to paste), remove the star anise
6.
Stir in the oil of the star anise, put the sweet noodle sauce and the dried yellow sauce 1:1, and slide to open
7.
Add chopped green onion, minced ginger, and minced meat in turn, stir-fry, add warm water, tofu, carrots, and cooking wine
8.
Simmer on low heat for ten minutes, open the lid, add sugar, and season with salt. I like to make it taste like Peking duck, so I mainly adjust the sugar with little salt.
9.
Make a thin glutinous rice flour and adjust it to the consistency you like
10.
Pour the cooked noodles into a saucepan with slightly controlled dry water (it’s convenient for me, you can also put it in a bowl and mix it quietly)
11.
In the bowl, let's have a meal
Tips:
Cook the noodles while making the sauce
