Private Noodles

1. Shred the ham and cucumber, cut the small tomatoes in half, and cut the coriander leaves.

2. Boil the pressed noodles in a pot, and then blow the noodles to cool.

3. Put the cold noodles on a plate, pour a bowl into the cold chicken soup, add garlic chopped and mix well.

4. Take another bowl to adjust the juice, pour balsamic vinegar, light soy sauce, sugar, sesame paste, sesame oil and salt and mix well.

5. Then spread the sliced cucumber, tomatoes, ham and coriander leaves on the noodles.

6. Drizzle with garlic soup, dig up the mixed sauce, sprinkle with fried peanuts and chili oil, and start eating.
Tips:
1. If possible, the freshly pressed noodles at home are the best. You can't buy ready-made noodles, but you must not use the over-alkali noodles you bought. The taste of small cold noodles is the worst.
2. The formula of private noodles is: 210 grams of flour, an egg + 5 grams of oil + water = 90 grams of liquid, so the pressed noodles taste very elastic. (If you like an oil-free formula, you can save 5 grams of oil)
3. If there is chicken soup in the refrigerator, the small cold noodles will taste the best. If there is no chicken soup, you can use chilled water.
4. The peanuts should be fried on a small fire and not easy to paste.
5. You can add chili oil or hot sauce according to personal preference.
