Pumpkin Honey Red Bean Buns

The pumpkin is peeled and cut into pieces, and steamed in a pot over high heat. (About 20 minutes)

Prepared flour, sugar and yeast powder.

Take out the steamed pumpkin while it's hot, mash it with sugar and let it cool, add a proper amount of flour and knead while pour the yeast water (previously melted with warm water about 30 degrees), and knead it into a smooth dough. (It can be rubbed and beaten like rubbing clothes) Cover the lid and let it stand to ferment. (The temperature is low in winter and it takes a long time)

Homemade Honey Red Beans: Soak the red beans in water overnight, put them in a casserole and add water that has not had the beans to a boil. After a high fire, boil them over a low heat to collect the water and add white sugar.

The fermented dough is vented and divided into equal parts. Like a bun, it is closed down and pressed into an oval shape. Use a knife to make a few strokes on the surface for secondary fermentation (about fifteen minutes) .

Put the fermented bean buns in the steamer (cold water), turn off the heat 15 minutes after the high heat is boiled, and continue to simmer for 10 minutes before opening the lid.
Tips:
The amount of each of my ingredients is only approximate, not too precise.
