【pumpkin Pie with Bean Paste】
1.
Cut the pumpkin into pieces, as small as possible to make it easy to steam thoroughly. I didn’t go for the skin. I heard that it’s easier to peel after steaming. But after steaming, I just scrape it along the path of the skin with a spoon.
2.
Bring the water to a boil on a high fire first, and then steam it on a medium heat for about 20 minutes. It’s almost time to try it with chopsticks. It’s very soft. Use a spoon to scrape the pumpkin into the bowl.
3.
While it's hot, add glutinous rice flour, white cotton sugar, and a little corn oil. Stir in one direction first. Then slowly add glutinous rice flour, and finally knead out the dough by hand. Moderately dry
4.
Patience is especially important for me who is doing this for the first time. After kneading the dough, I left it for about 10 minutes before starting the next steps. At this time, you can wash the pots and bowls and do some preparatory work.
5.
I divided the large dough into several small doughs of about 30g, and then slowly rubbed them into a hollow with my hands and filled it with red bean paste.
6.
After adding the red bean paste, roll it into a ball, and then gently press it into a pie with the palm of your hand. Don’t use too much force, it will crack the cake and the red bean paste will come out.
7.
Dip both sides of the biscuits with water by hand, and throw them into a sesame bowl. The sesame seeds will be firmer in water.
8.
Put the oil in the pan, heat it to 5 minutes and slowly fry the pancakes. I use a small fire all the way behind me, and slowly fry it until both sides are golden.
9.
Put a layer of oil-absorbing paper on top of the plate to absorb the excess oil. Put a plate and you succeeded. With red bean paste, there is no need for too much sugar in the cake, but it will be greasy. Learning to make pumpkin pie is equivalent to learning a routine. You can make many similar things in the future, and you can use your imagination freely.
Tips:
Be careful not to make the dough too dry. It is also very important to control the oil temperature during frying!
