Pumpkin Whole Wheat Buns
1.
Peel off the skin of the pumpkin, clean it, and cut it into thin slices. The thinner the better, and then put the sliced pumpkin in a steamer and steam it. Use chopsticks to poke it into fine pieces without pressure;
2.
Pour the steamed pumpkin slices and juice into the food processor and puree;
3.
Then add whole wheat flour and yeast to the pumpkin puree;
4.
Start the kneading function of the bread machine and knead it into a smooth dough; note: there is no bread machine, you can also knead directly by hand, and knead it into a three-light (face light, hand light, pot light) dough, no film is required;
5.
Put the kneaded dough in a warm place to ferment, and ferment to about 2 to 3 times its size, and just poke it in without collapsing and no obvious rebound;
6.
Take out the fermented dough, first press it with the palm of your hand to exhaust, then knead the base of your palm back and forth to exhaust, about two or three minutes;
7.
Knead the vented dough into strips, then use a knife to divide it into even small doses; note: it must be crisp and clean, and do not drag the dough with water, otherwise the dough will become deformed and sticky;
8.
Slightly shape the edges and corners of the cut small ingredients, and then put them in a steamer lined with oil paper (or fermentation cloth), and leave a certain fermentation space between the small ingredients;
9.
Cover the pot and continue to ferment for the second time until the dough becomes noticeably larger, then put the proofed dough in a pot in cold water, steam it on medium heat for 15 minutes, and simmer for 3 minutes;
Tips:
1. Note that the water content of pumpkin puree is different, so the required content of whole wheat flour will be different, please adjust according to the actual situation; on the other hand, whole wheat flour can also be replaced with ordinary flour, or a combination of ordinary flourâž•whole wheat flour, etc.;
2. If you just keep your figure or have no requirements for weight loss and fat reduction, you can also add an appropriate amount of sugar, stir while it is hot until it melts, or add sugar substitutes, so that it tastes better and does not affect weight loss;
