Purple French Fries

The purple sweet potato is peeled and steamed, and pressurized into a puree.

Add starch.
3.
Stir well.
4.
Knead into strips.
5.
Roll into thin strips and cut into sections.
6.
Wrap in egg wash.
7.
Coated with breadcrumbs.
8.
Fry slowly at 50% oil temperature and low heat.
9.
Fry until golden and remove.
10.
Purple French fries are complete.
