Purple Potato Meal Buns

1. Steam the purple sweet potato and mash it with a fork.

2. Mix the purple potato mash with water, sieve, and filter out the purple potato water.

3. A total of about 140 grams of purple sweet potato water needs to be filtered out.

4. Mix the purple sweet potato water with all the ingredients (except butter), knead until smooth and elastic.

5. Add butter and knead until the expansion stage.

6. Divide into 10 portions and relax for 10 minutes.

7. Shape the dough into an olive shape.

8. Put it in the oven for the second fermentation for about 40 minutes. After the second fermentation is complete, preheat the oven at 180 degrees (see the heating tube from red to dark), brush the surface of the dough with egg whites, sprinkle with sesame seeds, and bake for about 15 minutes in the oven.
