Purple Rice Shaomai

Soak purple glutinous rice for three or four hours

Cook in a rice cooker for later use

Soaked dried shiitake mushrooms

Chop the shiitake mushrooms after soaking, and mix with ground pork

Add one egg white (or one egg)

Add the above seasonings and mix well, and stir well

Pour a little olive oil in the pan and fry the meat quickly

Add purple rice and mix well, remove from heat and let cool

Mix flour with boiling water to form a hot noodle, let stand for 20 minutes

Rub the dough into long strips and cut into small portions

Pour into thin discs

Take a piece of noodle and wrap it in the purple rice filling, fold it like a bun, don’t close the mouth, put a green pea on the noodle (purely decorated) and steam it in a steamer for about five minutes.
