Purple Sweet Potato Pumpkin Two-color Bean Paste Bun

Take an appropriate amount of dry yeast powder, about 1% of the required amount of flour. Add warm water with a water temperature of about 40 degrees. Stir the yeast powder evenly. Then let it stand for 5 minutes.

The ingredients used to make the dough are purple sweet potato, oatmeal and pumpkin.

Steam the purple sweet potato and pumpkin on the pot for 20 minutes until cooked. Use oats directly.

Take three bowls and spoon in an appropriate amount of flour.

The pumpkin is steamed and crushed into pumpkin puree with a spoon. Pour the pumpkin puree and soaked dry yeast into a flour bowl and mix well.

Mix the pumpkin dough into a smooth dough, cover it with plastic wrap, and leave it in a warm place at about 40 degrees to ferment.

The purple sweet potato is steamed and crushed with a spoon to make the purple sweet potato puree. Pour the purple potato mash and the soaked dry yeast into the second flour bowl and stir evenly.

Mix the purple sweet potato dough into a smooth dough, cover it with plastic wrap, and leave it to ferment in a warm place at about 40 degrees.

Add oatmeal and soaked dry yeast to the flour in the third bowl, and mix well.

Mix the oatmeal dough into a smooth dough, cover it with plastic wrap, and leave it in a warm place at about 40 degrees to ferment.

This is fermented dough. The other two are similar. Ferment for an hour, and ferment to 2 times to 2.5 times the size.

After the fermentation is complete, take a piece of the same size dough for pumpkin dough and purple potato dough, and roll them into dough cakes of the same thickness and size. Stack the two pieces of dough together.

Roll up the dough from the long side into a long strip.

Cut the rolled noodles into small pieces with a knife.

Take out an appropriate amount of red bean paste from the refrigerator, knead it into a ball of red bean paste, and set aside. (The method of making red bean paste was introduced in my previous article "Red and Green Bean Paste Cake".)

Take a small potion and stand it up.

Spread it out into a piece of dough.

Put in a bean paste filling.

Close the mouth like a bun, and finally close the opening. Place it with the mouth facing down.

Put the prepared bean paste buns on the steamer and let them rise for 20 minutes; steam them for 15 minutes; steam them for 5 minutes before taking them out of the pot. The skin of the bean paste bun suddenly becomes cold and easy to wrinkle.

I made two two-color bean paste buns, purple and yellow bean paste buns and yellow and white bean paste buns.

The prepared bean paste buns are ready to be eaten!
Tips:
1. The rotating line of the bean paste bun is related to the number of turns of the dough. If there are more turns, the rotating stripes will be more and thin; if the number of turns is less, the rotating stripes will be thick and thick. However, both patterns are pretty good-looking, depending on personal preference. 2. When the red bean paste is wrapped into the dough, the red bean paste should be aligned with the center of the rotating circle outside the dough, so that the rotating stripes of the steamed red bean paste are straight, otherwise it will be skewed.
