Add monosodium glutamate, salt, and pour in the oil when it's 80% hot, mix and set aside.
4.
The fish is slaughtered and cut to remove the internal organs and gills. From the head to the tail, cut into thin slices at an interval of 5 mm. The head and tail are cut off, and the last two segments of the tail are also cut off. Wash off blood stains with clean water.
5.
The body of the fish is placed in a semicircle, the tail is pressed under the head, the head is placed in the middle, and the last two sections of the tail are placed on both sides of the fish body.
6.
Spread the prepared yellow chopped pepper sauce evenly on the fish, as shown in the figure below, leaving the sharp part without adding chili.
7.
Pour the steamed fish soy sauce from the middle space and steam for 8 minutes in the steaming cabinet.
8.
Sprinkle chopped green onions on the steamed fish, and place green and red pepper rings on the vacant pointed parts.
Tips:
1. After removing the fish's internal organs, use a knife to enclose the black material in the belly of the fish and clean it.
2. When slicing fish, try to make it even thicker and thinner, and cut to the belly of the fish with one cut, so that it will look good.
3. When we steamed fish in the hotel, we will put ginger slices and green onion handles for the first time. After steaming, remove the ginger slices and green onion handles, and drain the sewage, which can well remove the fishy and earthy smell. After the second steaming, it will be sprinkled with pepper and chopped green onion and then splashed with oil.
4. Pay attention to safety when splashing oil and be careful of being splashed by hot oil. For safety's sake, you can put the oil in the steaming for the second time, and serve it directly after it is out of the pot.
5. The steamed fish soy sauce is salty enough, pay attention to the amount when adding salt.
