Raw Cheese Cake

Put the digestive biscuits into the fresh-keeping bag and use a rolling pin to crush them. The more crushed the better. You can break them with a food processor. I use Oreo biscuits. If you also use Oreo biscuits, remember to remove the filling.

To the crushed biscuits, add butter that has melted into a liquid and stir

After mixing well, pour into 8-inch open bottom cake mold, compact with tools, and keep in refrigerator for at least half an hour to shape

Prepare a non-stick milk pot, mix 1/2 of the whipped cream (105g), 1/2 of the milk (34g), 50g of sugar, and a teaspoon of vanilla extract in the table of ingredients, mix well, and heat until it boils. Turn off the fire at all times, don’t boil, the protein will change

After the heated liquid cools slightly, add the gelatin tablets soaked in ice water and mix well until the gelatin tablets are completely melted

Put the cream cheese in a clean basin, soften it with insulated water, and beat with a whisk until smooth

Add homemade yogurt, lemon juice and the remaining whipped cream (105g) in sequence. Yogurt wants the thick yogurt in the picture, not liquid yogurt

Then add all the liquid in the milk pan, and mix the 2 completely evenly

Stir the evenly mixed mousse, pour it into an 8-inch mold that has been refrigerated and set the bottom of the biscuit, and put it in the refrigerator for 2-3 hours

Blow around with a hair dryer, or cover with a hot towel for 10 seconds, please take that demoulding

You can use cake as the base or use biscuits. As you like this cake, you can make 2 kinds of cake liquid separately, then mix them all together, and pour them into the mold. It is simple and delicious. The cheese can be softened in advance with water. 8-inch mold, I think the mousse part is very thin, you can try to put it in a 6-inch mold, or add a piece of cake in the middle
