Red Amaranth Soup

Take an appropriate amount of amaranth, wash, and cut if the leaves are large.

Wash peanuts and ginger and cut them.
3.
Beat the eggs and set aside.
4.
Stir the starch with water until there are no particles.
5.
Heat a little cooking oil in a pot, add peanuts, and ginger until fragrant.

Add water to boil the black pepper.
7.
Add dried shrimps, amaranth, salt, and chicken essence to taste, add the stirred starch water to boil again, turn off the heat and pour in the beaten egg liquid clockwise and stir, and add a proper amount of sesame oil.
Tips:
Put the starch according to your personal preference. If you put it more, it will be thicker, and if you put it less, it will be thinner. Sauté peanuts and ginger should use less oil, if more, the soup will be greasy and not tasty.
