Red Bean Paste

Soak the red beans in clean water overnight to make them swell and enlarge

Wash the soaked red beans, put it in a pressure cooker, add about 1cm of water to the red beans (but no more than 1cm before the red beans, I have added too much water, and it feels too wet after cooking), boil SAIC on high heat and press for 15 minutes. can

Put the boiled red beans in a clean basin, use a spoon to press the red beans into red bean paste, and press it to a little bit, so that the taste will be more delicate (if you have a mixer, you can directly use the mixer to puree)

Prepare the other auxiliary materials you need: caster sugar, red flake sugar, cooked glutinous rice flour and corn oil

Wash the pan and boil dry, pour in an appropriate amount of corn oil, and boil until warm

Pour in the red bean paste and stir constantly with a rubber spatula to prevent the bottom from getting stuck

In the process of making red bean paste, add fine sugar in portions to taste, and then continue to stir until the water slowly dries

Slowly simmer, and be sure to keep stirring midway

Tips:
1. The red beans are soaked in advance for easy cooking;
2. Be sure to use a pan to make bean paste, and keep stirring midway to avoid muddy bottom;
3. The cooked red beans can be stirred into puree with a blender, so that the taste will be more delicate;
4. The oil for fried red bean paste is best to use oil with a lighter fragrance and odor, salad oil or corn oil is fine, it is best not to use peanut oil with strong flavor, otherwise it will affect the taste;
5. Fried bean paste can be added with proper amount of cooked glutinous rice flour, which can help make bean paste thicker and can be better used for stuffing;
6. The prepared bean paste can not be used up at one time, it can be stored in the refrigerator with plastic wrap.
