Red Bean Paste Caterpillar Bread

Put all the ingredients in the dough into the bread bucket;
Then start the kneading program, about 20 minutes;
Then knead the dough until the film can be pulled out without breaking. Because it is soft bread, it does not need to be as thin as the glove film, as long as it reaches the expansion stage of the dough;
Then leave the dough in the barrel for basic fermentation until it is twice the original size.

This is a good dough, the temperature is high in summer, basically it takes less than an hour to prepare;
After that, take out the dough, press and exhaust, and let it stand for 10 minutes
Then divide it into 6 rounds and let it stand for ten minutes, so that it will not retract when it will roll out;
Then take a dough and roll it out into a square shape. If it's sticky, you can sprinkle some flour on the chopping board

Then take a small amount of red bean paste and spread over 2/3 of the dough;
Then cut a strip of about 1cm as shown in the picture, and the length is about 1/2 of the dough;
Then roll it up from top to bottom;
When it is rolled to the bottom, the mouth is down and it becomes a caterpillar, and you can see that the bean paste filling just spread has appeared.

Roll up all 6 caterpillars, then put them in the oven for secondary fermentation, 40 minutes;
Brush a layer of whole egg liquid on the surface of the dough;
Sprinkle some cooked sesame seeds for garnish;
Preheat the oven to 180 degrees, then put the bread on the middle layer and bake for 15 minutes. If the surface is colored, you can add a layer of tin foil to prevent the color from being too heavy

After the bread is baked, take it out, let it stand for 2 hours before eating it, and wait until the internal acid gas has evaporated.
Tips:
Two long words:
1. The temperature is high in summer, so it is best to open the lid of the bread machine when kneading dough. Basic fermentation does not require two hours, as long as it reaches twice the size, it can be taken out immediately;
2. I always put a bowl of boiling water in the oven for the second serve;
3. The moisture in the dough is the reference amount, set aside 20-30 grams to see if the water absorption of the dough continues to be added, just keep the dough a little sticky;
4. Don't use peanut oil or olive oil to make bread, because the oil itself has a strong taste.
