Fermentation should be moderate after shaping. Excessive fermentation will affect the taste of the finished product.
Brush the surface of the bread with egg wash, the baked bread will be oily and shiny, while the water-brushed bread will appear matte. This can be decided according to your preference.
The rolls should be closed tightly to avoid deformation after fermentation.
