Red Bean Sponge Cake

Take 150G red beans and add 400G water to boil in a pot. After the water is boiled, continue to boil for about 10 minutes.

Weigh 150G red bean water and let cool for later use. (Do not use red beans)

Take 90G glutinous rice flour, 120G rice flour and 50G sugar in a basin and mix well.

Pour a small amount of cold red bean water several times and rub the rice noodles back and forth with both hands.

Knead until the rice noodles are slightly moist and form a loose cake powder.

Sifting the cake flour through a sieve is the most patience test. It is not easy for the wet cake flour to pass through, but the sifted cake flour becomes softer when it is steamed.

Mix the honey red beans into the cake powder and put it in a bamboo steamer. The boiled jujube is cut into pieces, arranged evenly and stuffed into the cake powder, and the surface is sprinkled with green and red silk for decoration.

Put the bamboo basket in a pot of boiling water and steam on medium heat for 30 minutes.
Tips:
This amount can make a bamboo steamer with a diameter of 18cm. You can convert the amount of rice flour according to the size of your tool. The ratio of glutinous rice flour to rice flour is about 3:4.
