It is said that this red bean sponge cake is Song Meiling's most beloved Jiangnan dessert in the second half of her life. Since the establishment of the Grand Hotel in Taiwan, Song Meiling has visited the Grand Hotel to taste this sponge cake by name. Until she went to settle in the United States, the Grand Hotel would still make a large number of frozen express delivery to the United States during the Spring Festival. If it is not enough, Soong Meiling’s secretary will call back to Taiwan to place an order. In the past, the red bean sponge cake at the Grand Hotel was only made for Song Meiling alone, and outsiders would never have the chance to taste it. Since the death of Soong Meiling in 2003, the Grand Hotel has decided to provide a limited amount of red bean muffins every day from December 16th, as a memorial to Mrs. Jiang.
The red bean sponge cake is sweet and glutinous, with the fragrance of red beans and rice, and the rich sweetness of jujube. The taste is superb. The method is also very simple, as long as red beans, jujubes, honey red beans, rice, glutinous rice flour, sugar, green red silk or candied fruit. With these ingredients, you can easily COPY out of the favorite of the first lady of the Republic of China.

1. Take 150G red beans and add 400G water to boil in a pot. After the water is boiled, continue to boil for about 10 minutes.

2. Weigh 150G red bean water and let cool for later use. (Do not use red beans)

3. Take 90G glutinous rice flour, 120G rice flour and 50G sugar in a basin and mix well.

4. Pour a small amount of cold red bean water several times and rub the rice noodles back and forth with both hands.

5. Knead until the rice noodles are slightly moist and form a loose cake powder.

6. Sifting the cake flour through a sieve is the most patience test. It is not easy for the wet cake flour to pass through, but the sifted cake flour becomes softer when it is steamed.

7. Mix the honey red beans into the cake powder and put it in a bamboo steamer. The boiled jujube is cut into pieces, arranged evenly and stuffed into the cake powder, and the surface is sprinkled with green and red silk for decoration.

8. Put the bamboo basket in a pot of boiling water and steam on medium heat for 30 minutes.

Tips:

This amount can make a bamboo steamer with a diameter of 18cm. You can convert the amount of rice flour according to the size of your tool. The ratio of glutinous rice flour to rice flour is about 3:4.
