Red Date Ejiao Cake

Remove the pits of the red dates and cut them with a knife, as much as possible, so as not to pierce your mouth with the red dates!

Prepare 16 grams of instant donkey-hide gelatin powder;

Boil water in a pot, put the donkey-hide gelatin powder in place after the water is boiled, and boil it;

Then pour in the cut red dates;

After boiling, add baking soda and stir well, then add butter, stir until the butter melts.

Finally add the brown sugar, stir until the brown sugar melts, and remove from heat;

Pour in the beaten eggs, mix low-gluten flour and baking powder through a sieve, and pour into the pot;

Stir evenly with a rubber spatula. Use the method of turning up from the bottom, do not stir in a circle, and stop turning when the flour is completely moistened.

Pour the mixed batter into the mold, 7 minutes full.

Immediately put the mold into the preheated 180 degree oven, bake the middle layer for about 15-20 minutes, until the cake is completely puffed. Put a toothpick into the center of the cake and then pull it out. There is no residue on the toothpick, which means the cake is ready.
Tips:
1. The weight of red dates in the formula refers to the weight before core removal.
2. Butter can also be replaced with 30ML vegetable oil. Please use odorless vegetable oils such as corn oil and sunflower oil. Do not use oils with special flavors such as peanut oil and olive oil to avoid spoiling the original flavor of the cake. The red date cake with butter has a stronger aroma.
