Red Dates and Bean Dregs

After the soy milk is beaten, strain it and press it slightly with a spoon, but not too dry, just press it to 70% dry.

Put the bean dregs into the pot and add corn flour.

Use chopsticks to stir and mix them together without any dry powder.

Wash the red dates, remove the pits after all halves, cut the red dates into strips, and then dice them.

Add diced red dates to the bean dregs.

Add raisins particles and mix well.

Pick up a ball of okara dough, put it in the palm of your hand, and round it slightly, poke a hole in the bottom with your hand to make a socket shape.

Grease the plate to prevent sticking. Put the socket on the plate, leaving a little space in the middle to prevent adhesion.

Put the wotou in a rice cooker and steam it.
Tips:
You don’t need to squeeze all the soybean milk in the bean dregs, leave a little water, and you don’t need to add water. The soybean milk that has just been filtered out will be better if it is slightly blanched.
Red dates and raisins can play a role in seasoning. The amount is according to your own preferences. You can put more if you like sweet ones.
