Refreshing Clams Mixed with Cucumber

Put the clams in ice water to spit sand for at least 2 hours. You can put some salt and a stainless steel spoon in the water to help the clams spit sand. After the clams spit out the sand, clean the shell with clean water.

Boil water in a pot, pour the clams in after the water has boiled, add 2 slices of ginger to remove the smell, and cook until the clams open.

After the clams are boiled, they should be taken out immediately, and then put in cold water and rinsed. This will make the clam meat more crispy. Then peel the clams to remove the meat, drain the water and set aside. The clams should not be cooked for too long, and they must be taken out of the mouth, otherwise they will cook too old.

Clean the cucumbers, peel them off, pat them with a knife, and then cut them into small pieces for later use.

Take a small bowl, put the garlic paste, soy sauce, balsamic vinegar, sugar, salt, and sesame oil together and mix well.

Put the cucumber and clam meat in a bowl, then pour the sauce on top and mix well.

After mixing the cucumber and clams, add the chives, coriander and chili, and mix well.

Have a refreshing and appetizing side dish.
Tips:
1. Clams must be kept in clean water for more than 2 hours to spit sand. Put a stainless steel spoon in the water to help clams spit sand.
2. The clams should be removed immediately after they are cooked until they are open, so as not to affect the taste if they are too old.
