Refreshing Mint Pea Cream Soup

If using potatoes: Cut potatoes and onions into small cubes. If you use potato flour, just cut onions. On the far right is fresh mint.

Add oil to the pan and saute the onions until fragrant. If using potatoes, pour them into the pot as well.

Add vegetable broth and bring to a boil. If you use potatoes, you need to cook for 15 minutes until the potatoes are soft.

Add peas, boil and simmer for 5 minutes. Season with salt and pepper.

Remove the appropriate amount of mint leaves, chop them, add to the soup, and cook for another 1, 2 minutes.

First scoop out two spoonfuls of peas, just peas. Pour the remaining soup into a tall container and use a stirring rod to break up all the contents of the soup.

Pour the soup back into the pot and bring to a boil.

Add the cream and bring to a boil.

Sift the soup and transfer it to a soup plate or bowl.

If you use mashed potato powder, stir in the right amount of mashed potato powder here to thicken the soup. Add the peas scooped out earlier, stir it, and you're done.
Tips:
1. Mashed potato powder is more convenient and quick. But using potatoes and breaking them with a stirring rod, the taste will be more delicate.
2. The amount of mint is given according to personal taste, add the amount while tasting, don't add too much at one time.
